- 2 large eggs

- 1 teaspoon vanilla extract

- 2 cups all-purpose flour

- 1 teaspoon baking powder

- 1/2 cup buttermilk

Instructions:


1. Preheat the Oven:

   - Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.


2. Prepare Sweet Potatoes:

   - Peel, cube, and boil the sweet potatoes until tender. Mash them with a fork or potato masher until smooth. Measure out 1 cup of mashed sweet potatoes.


3. Make the Cinnamon Swirl:

   - In a small bowl, mix together 1/4 cup granulated sugar and 1 tablespoon ground cinnamon. Set aside.


4. Prepare the Sweet Potato Batter:

   - In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Mix until well combined.
